This is a big pork loin (not tenderloin) coated in olive oil, rubbed in brown sugar rub then wrapped in bacon. Smooked for 1 hour and 5 minutes at 375 degrees to reach 155 internal temp.
Perfect with a baked sweet potato with the same rub as on the meat.
